Production
The most widely used olive cultivars in this
area of Italy are Leccino, Carbonella, Pendolino, Rosciola,
Frantoio, and Raja. "Il Mompeo" olive oil is made
using only olives which have been hand picked and pressed
at the "Il Viarino" olive mill. |

extraction takes place using natural methods and the product
does not undergo any further treatments. |

The
oil becomes clear through the natural sedimentation of the
suspended particles. The oil's slight opalescence is the proof
of this. |
Since 2008 Viarino Frantoio has used Novoil Export Ram. This machinery has a BIO certificate, allowing it to be used by Organic Olive Oil producers for a certified organic product.
This innovative system allows independent control of the threee component parts (crusher, decanter, separator), creating three autonomous units that can be controlled separately. This system is based on industrial style hardware, guaranteeing reliability.
