Production The most widely used olive cultivars in this area of Italy are Leccino, Carbonella, Pendolino, Rosciola, Frantoio, and Raja. "Il Mompeo" olive oil is made using only olives which have been hand picked and pressed at the "Il Viarino" olive mill. The extraction takes place using natural methods and the product does not undergo any further treatments.     The oil becomes clear through the natural sedimentation of the suspended particles. The oil's slight opalescence is the proof of this.
